We've never done it before!

This oil is produced from specially selected olives exclusively from the very first 4 days of harvest. This means that the yield of oil is much lower than our classic blend – we only achieve approx. 6.5-7% oil per kg of fruit compared to the usual 10-14%. On the other hand, the intensity of aromas and spicy flavor nuances is much higher.

Every day, the harvested olives have been pressed in micro-batches within 4 hours of being picked. This has resulted in a total of 984 numbered bottles.

The first olive oil from the harvest is a very special experience for oil enthusiasts. It is extra virgin olive oil in a special class. It has character, scratches the throat, and has notes of grass and artichoke. If you like it, then you will get double the intensity of this extra virgin oil. It is a unique exclusive olive oil that we recommend eating over a soup with bread, with fresh vegetables, beans and all kinds of bruschetta.
